Marinated sausages with horseradish and Mini Yorkshires

INGREDIENTS:



6 beef sausages

1 tbsp runny honey

2 tbsp grainy mustard

1 tbsp olive oil

3 tbsp crème fraiche

3 tbsp horseradish sauce

18 Aunt Bessie’s Mini Yorkshire Puddings

Watercress sprigs

Salt and freshly ground black pepper


Serves: 6

INSTRUCTIONS:



Preheat the oven to 200°C/180°C fan oven/gas mark 6. Put the sausages in a roasting tin and add the honey, mustard and olive oil. Toss everything together to mix well then roast in the oven for 20-30 minutes until golden and cooked through.

 

Mix the crème fraiche and horseradish sauce together in a bowl and season well. Set aside.

 

Take the sausages out of the oven and put the Yorkshires on a flat baking sheet. Cook in the oven for 4 minutes.

 

Slice the sausages into chunks. Spoon a little of the horseradish cream into each Yorkshire and top with a couple of slices of sausage and sprig of watercress. Serve straightaway.
