There is nothing I love more than sitting down with family and friends for Sunday lunch and I'm especially looking forward to sharing a roast with them on Christmas day.

On Christmas morning remove your joint from the refrigerator, cover and leave on the worktop to come up to room temperature. This will make cooking much easier.
