Strawberries & Ice Cream Yorkshires

Strawberries & Ice Cream Yorkshires


• Aunt Bessie's 12 Golden Yorkshires
• Vanilla ice cream
• Strawberries (between 1-2 strawberries per Yorkshire pud will do)
• Icing sugar (optional)

How to cook

1. Cook the Yorkshire puddings in the oven according to the guidelines on the back of the packet.
2. While they're cooking, wash the strawberries and cut them into halves.
3. Take the Yorkshires out of the oven and leave them to cool for a couple of minutes.
4. Plate the Yorkshires, add a scoop of ice cream to each one, and place the strawberries on top.
5. Add a sprinkling of icing sugar if you're feeling fancy.
6. Tuck in and enjoy!


Roast Chicken Dinner

Roast Chicken Dinner


• Small bunch of fresh thyme (leaves removed)
• 1 x 1.5-2kg/3lb 5oz-4lb, Chicken
• 50g Butter softened
• Sea salt and freshly ground black pepper (to taste)
• 4 tbsp Plain flour
• 350ml of Chicken stock - you can make this from cubes or powder, or you can use liquid stock.
• 1 bag of Aunt Bessie’s Roast Parsnips
• 1 Bag of Aunt Bessie’s Special Roast Potatoes Basted in Duck Fat
• 1 bag of 12 Aunt Bessie’s Yorkshire Puddings
• 1 bag of Aunt Bessie’s Carrot & Swede Mash
• 1 bag of Aunt Bessie’s Sage & Onion Stuffing Balls

How to cook

1: Preheat the oven to 200°C/400°F/Gas 6.
2: Add the softened butter and the thyme leaves to a bowl, and mix with a spoon.
3: Spoon the thyme and butter mixture all over the chicken, working it into all the little nooks and crannies.
4: Place the chicken in a roasting tray, and season with the salt and pepper.
5: Cover the chicken loosely with tinfoil and roast in the oven for 30 minutes.
6: Remove the foil (put it to one side for later) and roast for another 20-30 minutes. At the same time, put the roast potatoes, stuffing balls and parsnips into the oven.
7: The chicken should now be done. To double check, pierce the thigh meat with a skewer. If the juices run clear, that means it’s fully cooked through.
8: Remove the chicken from the oven and place to one side in a separate dish to the juices. Re-cover it with the foil let it rest for ten minutes.

Now for the gravy...

9: If there seems to be too much fat in the pan, then drain some of it away (you’ll need about one tablespoon of fat left in the pan).
10: Place the roasting dish on to the stove top, over a medium heat.
11: Bring the pan juices to the boil. Add the flour and stir until the flour is well combined.
12: Reduce the heat a little and cook; stirring often until the flour mixture is well browned.
Step 13: Make sure you scrape up the tasty meat residue as you stir.


14: Place the carrot and swede mash into a microwavable bowl and follow the cooking instructions on the bag.
15: Take the roasting dish off the heat and slowly pour in the stock, stirring constantly until it’s mixed well.

Chef’s Top Tip: Slow down! If you add the stock too quickly, it will be harden to combine with the flour mixture.

16: Pop the Yorkshire puddings in the oven and cook for 4 minutes.
17: Return the roasting dish to the heat and bring mixture to the boil. Reduce heat and simmer for about 3 minutes. Stir occasionally, and season with the sale and pepper.
18: Remove the parsnips, roast potatoes, Yorkshire puddings and stuffing from the oven. Take the carrot and swede mash out of the microwave, and plate up (or place into serving dishes if you’re feeling fancy). Carve the chicken and serve.

Seriously Scrummy Leftover Turkey Soup


• 1 leftover turkey carcass
• 4 pints water
• 1/2 teaspoon salt
• ¼ teaspoons cracked black pepper
• 2 bay leaves
• 1 bag Aunt Bessie’s Roasting Vegetables or 500g of leftover veg
• 200ml single cream

How to cook

1. Place the turkey carcass in a stockpot, then add the water and bay leaves. Slowly bring to a boil over a low heat, cover and simmer for 2 hours.
2. Remove what’s left of the turkey from the carcass, and cut the meat into bite-sized pieces, (you can now throw the carcass away).
3. Add in the bag of Aunt Bessie’s roasting vegetables and bring to the boil. Remove from the heat and blend the mixture using a food processor.
4. Add the turkey pieces and cream to the broth, and serve with warm, crusty bread.
5. Tuck in and enjoy!

Tasty Sausage & Bean Hotpot with Yorkshire Puds


• 454g pork sausages
• 1 onion, chopped
• 420g baked beans
• 410g red kidney beans
• 400g chopped tomatoes
• 2 red peppers
• Aunt Bessie’s Perfect For Sausage Yorkshires

How to cook

1. Cut the sausages in half, and peel and finely slice the onion/leek.
2. Place sausages and onion/leek in a large, flameproof casserole dish or large frying pan.
3. Cook gently for 10 minutes, turning at regular intervals until the sausages are browned and the onion/leek is soft.
4. Slice the red peppers, add to the hotpot along with the tin of tomatoes - cook for 5 minutes.
5. Add the baked beans, drained kidney beans, continue to cook for a further 5-10 minutes.
6. During this time, pop the Aunt Bessie's Giant Yorkshires into the oven and cook for 4 minutes (according to the instructions on the back of the packet).
7. Take the Yorkshires out of the oven, serve on a plate and dish hearty spoonfuls of the hotpot into them.
8. Tuck in and enjoy!


Scrummy Nutmeg & Sultana Scones

Scrummy Nutmeg & Sultana Scones


454g Plain flour 
30g Baking powder
60g Butter 
90g Sugar  
230g Milk 
1 Egg  
Pinch of nutmeg
80g Sultanas  
Clotted cream and jam, to serve

How to cook

Rub the butter into the flour, baking powder and nutmeg so it forms a crumble-like mixture.
Add in the milk and egg.
Add the sultanas and start to nead the mixture until it turns into dough.
Knead the dough on a floured surface and roll out it out until it's about 1cm thick.
Use a cutter (around 6.5cm will do) to cut the dough into servings.
Place on a baking tray, spaced out, and wash with a pastry brush using a little bit of egg and milk
Leave the dough pieces to rest in the fridge for 20 minutes.
Pop them in a pre-heated oven, and bake at 220c/425f/gas mark7 for about 10 minutes.
Take them out of the oven, leave to cool and serve with a big dollop of jam and clotted cream.
